Yup, that's right... pink pasta.
We all love a good bowl of pasta. And if you don't, exit out of this post.
Sometimes we don't always love the carbs. Let's not forget though, carbs are not the enemy. Sometimes we need another pasta option that is a tad healthier. This recipe is coming at you from Nu Pasta; made with with the root of the konjac plant which is rich in dietary fibre and has no starch. The absence of starch is the reason why NuPasta is so low in calories and carbs.
Their Instagram page showcased a pink pasta sauce and I knew I had to try it. It was delicious. Perfectly sweet, salty , and flavorful.
For one serving (one package of Nu Pasta):
Ingredients:
2 red beets
1 pack of NuPasta Fettuccine
¼ cup extra virgin olive oil
1 shallot, chopped
1 garlic clove, peeled
½ lemon, juice extracted
1 tbsp salted butter
Salt and pepper, to taste
2 tbsp goat cheese
1 tsp parmesan cheese
1 tsp chopped parsley
Directions:
1. Peel beets with a vegetable peeler. Wrap them in foil individually and bake for 40 minutes on 400 degrees F. When finished, unwrap and set aside to cool.
2. Drain, rinse and pan-fry 1 pack of NuPasta Fettuccine for 2-3 minutes. Set aside.
3. In a medium pan, heat olive oil on medium heat.
4. Saute shallot and garlic.
5. Add shallot, garlic, lemon juice, beets, and butter into a blender or food processor. Blend until all ingredients are combined, and texture is smooth.
6. Heat beet mixture in pan on medium heat for 3 minutes (or until desired temp). Mix in salt and pepper, to taste.
7. While on the heat, mix in NuPasta fettuccine, stirring to combine.
8. Plate the dish: top with goat cheese, parmesan, and parsley.
9. Serve and enjoy!

I would 10/10 reccomend this recipe. It was easy to make, and easy to eat. Not to mention it's so darn cute!
When I made this recipe, we boiled the beets instead of baking them. We also went without the shallots, and subbed the goat cheese for feta cheese. Still yummy.
Like any other recipe, try the sauce as you add ingredients to taste for flavoring and adjust as you go!
Sometimes you need to have a recipe that makes cooking fun again. This definitely did that. If you want to try something new, that limits calories but doesn't limit flavor, give this a shot. Let me know what you think!
