You can make this as healthy, or hearty, as you want. To put a healthier spin on it, try making your own sauce. This lets you control your sugar and salt intake- store bought sauces have a good amount of salt and sugar in them, but don't let this stop you from using it.
The breading is the hardest part to make "healthier". I just used store bought, Italian seasoned panko bread crumbs. If you're looking for a better option, you can use bran or fiber rich cereal to coat it.
Now that we have established what we need for ingredients, let's move onto directions:
These directions are super simple, and straight forward. If I can do it, you can do it. Always remember to never set the timer and walk away. Ovens are all a bit different- check on your eggplant during both baking sessions to make sure you aren't burning anything.

Personally, I find this dish filling- half the because it's so good I go up for seconds. I usually stick to a spinach salad, filled with vegetables and feta. But the options are endless, and totally up to you.
